Satsuma (薩摩) is a premier, authentic shochu brand representing Kagoshima, Japan. It preserves its core value by strictly adhering to traditional methods and a deeply rooted sense of locality. Every bottle of shochu produced under this name is crafted using water sourced entirely within Kagoshima Prefecture, following time-honored fermentation processes that rely exclusively on rice or sweet potato koji. Most notably, the distillery selects only 100% Kagoshima-grown sweet potatoes and conducts the entire production cycle—from brewing and single-batch distillation (honkaku) to bottling—locally within the region. Kagoshima Prefecture features a warm, humid climate with an average annual temperature of 17–18°C and over 2,200 mm of annual rainfall, paired with a unique volcanic topography and fertile soil. While these natural conditions can pose challenges for traditional rice cultivation, they provide the absolute optimal environment for growing diverse varieties of high-quality sweet potatoes. These premium sweet potatoes serve as the essential ingredient that defines Satsuma Shochu's signature rich aroma and smooth finish.
