A Companion to Daily Life for 160 Years, Kato Shuzo
Situated in the Yoshikawa region of Joetsu City, Niigata Prefecture, Kato Shuzo Co., Ltd. is a historic brewery that has been crafting sake imbued with the local spirit since its founding in 1864 (the first year of the Keio era). Guided since its inception by the philosophy of creating "sake that stands by the side of the drinker," the brewery does not focus heavily on limited, small-batch productions solely to win awards. Instead, its ultimate goal is to craft the "finest table sake" that anyone can comfortably enjoy at their daily dining table.

Capturing the Broad Spectrum of Niigata Sake
The products offered by Kato Shuzo showcase distinct individual characters across each brand. The current lineup—featuring "Echigoya Kome-label Nigori," "Yukiusagi Junmai Daiginjo," and "Ichikura Daiginjo"—beautifully and in a balanced manner demonstrates the wide spectrum of Niigata sake, ranging from a cloudy nigori style where the gentle presence of rice stands out, to a daiginjo characterized by its delicate aroma. While each product possesses its own unique traits, they all faithfully reflect Kato Shuzo’s brewing philosophy by prioritizing a clean finish and stable quality.

Uncompromising Commitment to Quality and Harmony
Throughout the entire brewing process, Kato Shuzo adheres strictly to rigorous quality control and consistency rather than mass production. In particular, the brewery focuses on maximizing the sake's perfection by closely monitoring the condition of the rice and seasonal transitions, making meticulous adjustments along the way. Rather than pursuing stimulating flamboyance, it emphasizes a balanced flavor that never grows tiring even after multiple glasses, as well as seamless food pairings. Rooted in the identity of Niigata sake, the brewery continues to craft sake that naturally blends into the diverse daily lives of consumers, firmly establishing its reputation as a trusted institution.
